"This is a 100% Cabernet Sauvignon sparkling that Duke Ranson always wanted to make when he owned the winery. It was whole bunch pressed and then tiraged for 11 months. It has a creamy strawberry and red berry character, some hint of autolysis with nice palate texture and richness. It’s technically bone dry but there is a background of natural fruit sweetness. There is no dosage in this which is because of the natural fruit sweetness, providing a great balance."

Appearance: fine bright salmon pink; delicate, brilliant, fine steady bead
Aroma: bright wild strawberry; strawberry shortbread cheesecake, Chantilly cream, raspberry, carnation, pink rose petal, fresh sweet crushed red berries
Palate: fine elegant, sweet red fruit; juicy, delicious, full and creamy, yet long, fine and fresh; fresh, sappy, round; summer berries, red currant, wild raspberries and strawberries; raspberry cane, creamy with hint of vanilla pod
A low yielding year of heavy rainfall in the build-up to the ripening period and close to harvest. The mitigating factor was the warm breeze from the east which helped to dry out the canopy and keep disease at bay. Harvest was early and resulted in concentrated fruit with great ripeness.
Painstakingly hand harvested in early morning, fruit was cooled overnight before whole bunch pressing. Juice was lightly settled, racked to ferment, and allowed to progress at cool temperatures to preserve the aromatics. In late May, the wine returned to bottle for tiraging, fermented slowly and rested on the lees until disgorging in May 2022 with zero dosage (no sugar).
